Blue oyster (a cool-weather strain of Pleurotus ostreatus) is the most forgiving mushroom to grow at home. It fruits readily at normal room temperatures, and its caps start steel-blue and lighten as they open.

Harvest the cluster just before the cap edges flatten out. A second flush often follows a couple of weeks later.
