Pink oyster (Pleurotus djamor) is a tropical oyster that fruits fast and loves warmth. It's a good kit for a warm kitchen in summer, but it sulks below about 60°F.

Cook pink oysters soon after picking, because they don't keep as well as other oysters. Don't refrigerate the kit before you start it, because cold can damage this species.
