Maitake, or hen of the woods (Grifola frondosa), forms clumps up to 50 cm of curled, grey-brown caps on a cream branching stalk. It's most prolific in eastern North America, at the base of old oaks and maples, and fruits in September and October.

It's a choice edible when well cooked, though some people are allergic. Grown outdoors on stumps or logs it can take 2–3 years to first fruit; indoor blocks fruit at roughly 55–70 °F.
